Broccoli pizza

This is a delicious and more nutritious alternative to the kind of pizza that you’re used to! As it’s so nutrient-dense and high in protein, it’s really filling, and I find that half a pizza is plenty. This pizza is free from grains and and gluten and it’s full of flavour! It’s also a great way of getting more greens in your diet.

Makes 2 pizzas

360g broccoli (stalk removed)
250g ground almonds
3 egg whites, beaten
3/4 tsp bicarbonate of soda
Pinch of salt
Few pinches of black pepper

For the sauce:

I use my homemade tomato sauce, which is packed with extra veggies.

Topping suggestions:
My favourites are mozzarella, Prosciutto, mushrooms and black olives. The cheese melts beautifully and the ham goes perfectly crispy.

Serving Suggestion:
This pairs perfectly with a green salad,
such as watercress and rocket, drizzled with lemon juice or balsamic vinegar.

Preheat the oven to 190°C (170°C fan) and line two baking sheets with parchment paper. Grease these very well with coconut oil (or butter) to avoid the paper sticking to the base.

Begin by making the tomato sauce.

For the base:

Whilst the sauce is cooking, grate the broccoli in a food processor to form rice-sized pieces.

Then add the rest of the ingredients and blend together in the processor to make a sticky dough.

Separate the dough in half and flatten onto the baking sheets to form a pizza base.

Bake in the oven for 20 minutes. Then remove, spread with the tomato sauce and add your toppings.

If you’re using Parma ham and mozzarella, bake for a further 10 minutes to allow the cheese to melt and the Parma ham to crisp up.
