Chai Pecan Porridge

This is a warming and spicy version of porridge which is great for cooler mornings! It’s been approved by my sweet-toothed sister, so here is the recipe.

1 Chai teabag (I used teapigs, but if you don’t have one try adding 1 tsp cinnamon, ½ teaspoon ginger and 1 cardamom pod -and a regular tea bag if you have one- to the 50ml boiling water and leave for 5 minutes)

40g porridge oats

½ tsp cinnamon

15g pecans, broken up, plus extra to top

50ml almond milk

100ml boiling water

2 dried figs, chopped, to serve

1.) Pour 100ml boiling water over the chai tea bag and leave to steep for 5 minutes. Remove the tea bag and add the milk. (If you’re using water, you just need to remove the cardamom pod and tea bag before adding milk)

2.) Pour this over the oats and add the broken pecans and cinnamon. Being to the boil, then reduce the heat and simmer  until all of the liquid has been absorbed or it reaches a creamy consistency (about 10 minutes)

3.) Remove the porridge from the heat and serve with the chopped dried figs and extra pecans on top.

Thank you! It’s actually summer here, so it probably wasn’t the best time to post it haha! But at least it’s winter in other places 🙂
