This is a really simple recipe which everyone should know about. It’s such a delicious and healthy topping which goes well with porridge and with Greek natural or coconut yoghurt. Although quite autumnal, this recipe is great all year round or when you need to use up some browning fruit. It’s very versatile, so you can use any seasonal fruit, and the warming spice combination reminds me of Christmas. As well as tasting incredible, the ginger offers immune-boosting nutrients and the cinnamon helps to keep blood sugar levels stable. Try serving this with my Basic Quinoa Porridge.
Makes 6 portions
Ingredients:
6 apples, cored and cubed
40g sultanas
2tsp allspice
2tsp ground cinnamon
Thumb-sized piece of fresh ginger, peeled and grated (I put mine through a garlic press)
Juice of 1 lemon
200ml water
Method:
Add all of the ingredients to a saucepan and cook on a low heat, stirring occasionally, until the apples are soft and the liquid has reduced.
