I only realised the other day, that despite being a meat-eater, I have no recipes on my blog that include red meat. Although I don’t actually eat it that often as I prefer fish and chicken, I do enjoy the odd piece of red meat. I made this quick and easy stir-fry up the other night for dinner, and found that the real star of the show is the dressing/marinade, which transforms the dish!
Serves 4
Ingredients:
1tbsp coconut oil
1/2tbsp ground coriander
1/2tbsp ground cumin
3 garlic cloves, diced
2 onions, chopped
200g tenderstem broccoli
2 aubergines, chopped
2 carrots, spiralized or julienned
400g quick-fry beef steak, cut into 2cm-wide strips
3cm-piece fresh ginger, peeled and grated or diced (I put mine through a garlic press)
Black pepper and salt, to taste
Fresh coriander, to serve
Fresh red chilli, chopped, to serve
Sesame seeds, to serve
For the Zingy Mustard marinade and dressing:
2tbsp apple cider vinegar
2tbsp English mustard
Juice of 1 lemon
Method:
1.) The night before, prepare the marinade. Mix all of the ingredients together and split the mixture into half. Lie the beef strips in half of the sauce, season to taste and leave to marinate overnight. Store the other half in the fridge to use as dressing the next day.
2.) When you’re ready to make it, in a large frying pan, dry-fry the ground coriander and cumin for about half a minute until fragrant but not burnt. Add the coconut oil and allow it to heat up for 1 minute.
3.) Add the garlic, onion and ginger to the frying pan and sauté over a medium-high heat for about 10 minutes until soft and clear but not browned.
4.) Add the aubergine, carrots and broccoli and sauté for 15 minutes until cooked through but still slightly crunchy.
5.) About 5 minutes before the end, in a separate griddle pan, add 1tsp coconut oil and heat for 1 minute. Transfer the marinated beef strips to the griddle pan and cook for about 30 seconds on each side so that they’re still rare- tender and slightly pink in the middle.
6.) Add the beef to the stir-fry pan and mix in. Serve with the fresh coriander and chilli, remaining dressing and sesame seeds.
