You might have noticed that my blog features a lot of cooked fruit at the moment. As the weather turns darker and damper, naturally I start to crave warming, spicy flavours. I vary my breakfasts all the time, but there is nothing that I look forward to more on a wet, grey morning than a bowl of creamy quinoa porridge topped with juicy spiced fruit. Apples and plums are my favourite types of fruit to stew, but I make sure to use seasonal fruit. Try serving this with my Almond and Plum Porridge, or with Greek natural or coconut yoghurt.
Makes approx. 8 portions
Ingredients:
500g plums, stones removed and chopped
2 star anise
1/2tbsp almond extract
Juice of 1/2 lemon
1tsp ground allspice
50ml water
Method:
1.) Add everything to a saucepan and bring to the boil.
2.) Then reduce the heat and simmer until the fruit is soft and leaking juice, and the liquid has mostly reduced (about 10 minutes) – it depends how runny you like yours.
Either serve hot immediately, or leave to cool before storing it in the fridge until ready to use. Enjoy!
