Breakfast is such a wonderful meal, and I am particularly partial to big bowls of porridge during colder weather. This grain-free porridge is creamy and warming, and the almond extract gives it a slight marzipan flavour which works really well with the stewed plums.
60g uncooked quinoa, soaked overnight and rinsed
125ml almond milk (I like Ecomil) or water
1/2tsp almond extract
A helping of my Almond-infused Stewed Plums, to top
1tbsp almond butter, to top
Flaked almonds, to top
1.) Add the quinoa, almond milk and almond extract to a saucepan and bring to the boil. Then reduce the heat and simmer until the liquid has been absorbed.
2.) If you want to serve the stewed plums hot, start to heat these up gently in a pan as the porridge cooks.
3.) Serve the porridge with the stewed plums, almond butter and flaked almonds. Enjoy!
